The numbers on the wiki are for Spotting & Shooting skills. The tracking numbers still haven't been nailed down. There is another topic with some rough calculations, I'll post it if I can find it.

You need to ID 3 tracks from the same animal for it to count as "Tracked" in your stats. But for the tracking skill, every track ID'd counts. It's just that the 1st-3rd tracks count more than any additional tracks.

EDIT: found it: http://forum.thehunter.com/viewtopic.php?f=31&t=45664
It's "Tod", with one bloody 'd'!

Does it work like that again? Because it was changed (unintentionally?) a while ago so that any animal you track just once does show in your stats. Didn't kow it was back to "three tracks needed".

No, this was not fixed. They fixed the first three tracks giving a bonus, but one track is still enough for an animal to appear in the statistics.

Have updated the german version of the sheet:
- added new species (Dickhornschaf, Grizzlybär, Rocky Mountain-Wapiti and Weißschwanz-Schneehuhn) for rifles and pistols.
- added new species (Dickhornschaf, Grizzlybär, Rocky Mountain-Wapiti and Weißschwanz-Schneehuhn) and new reserve (Timbergold Trials) to the "Tiervorkommen".
- added conditional formatting for rifles and pistols:
if text is exactly: -

Just an FYI love the tables, on the permitted ammo you are missing slug 12GA for Whitetail.
