Can anybody tell me how it is possible that the first bullet hit the skull and the hipbone, but didn't hit any vital organs on the way through?

If the animal is standing nearly straight at you, they often swing the head left & right. If you then shoot it at the head, it'll go though the head and hit the hip.
First scenario that did pop up in my mind.

That's very well possible. But still, would it miss the lungs?

Yes, It'd fly through the frontal skull, then through the air and re-enter the body at the flank. JFK style ;)
