Does anyone know or know where the Summer Fiesta 2003 Mission Lists for Easy, Medium and Hard missions? I haven't found this info posted anywhere and would like to practice these fun missions.

Sometimes someone will post the Event Missions as they go through and complete them, but I don't think anyone did that for this event.

Antler
Harvest a male Roosevelt Elk with a single shot through the heart and/or lungs using any unscoped weapon (bones may not be hit).
Harvest a male Sitka Deer at 100% harvest value using any unscoped weapon.
Harvest a fleeing Roe Deer using buckshot at 100% harvest value.
Harvest a spooked Mule Deer buck from more than 150m (approx. 492 ft).
Predator and Prey
Harvest a European Rabbit scoring more than 2000 using any 12GA single-shot shotgun.
Harvest a male Puma using any unscoped weapon.
Harvest a male Brown Bear from under 20m (approx. 66 ft) with a single shot.
Harvest a Black Bear with a single shot through the heart (other organs may be hit).
Horns & Tusks
Harvest an unspooked Alpine Ibex using any unscoped .243 rifle.
Harvest an unspooked Feral Goat from less than 50m (approx. 164 ft).
Harvest a male Wild Boar with a single shot through the brain.
Harvest a male Dall Sheep from less than 50m (approx. 164 ft) (skull may not be hit).

Harvest an airborne Rock Ptarmigan using the 12GA single-shot shotgun at 100% harvest value.
Harvest an unspooked male Northern Pintail using any 12GA shotgun while it's swimming.
Harvest anairborne Pheasant scoring more than 25 at 100% harvest value
Harvest an unspooked male Wood Grouse from less than 10m (approx. 33 ft).

Harvest a male Axis Deer scoring more than 130 using any traditional bow (except the heavy recurve bow) at 100% harvest value (bones may not be hit).
Harvest a Whitetail Deer with a single shot through the heart from over 180m (approx. 591 ft).
Harvest a fleeing female Reindeer from over 25m (approx. 82 ft) with a single shot (lungs and/or heart must be hit).
Harvest a male Rusa Deer with a single shot through the heart without using a platform.

Harvest a fleeing Snowshoe Hare from over 25m (approx. 82 ft) with an unscoped .22 Pistol "Grasshopper".
Harvest a charging Grizzly Bear from under 5m (approx. 16 ft) with any scoped weapon.

Harvest a Rocky Mountain Elk bull with a single shot from over 180m (approx. 591 ft) using the .50 Inline Muzzleloader.
Predator and Prey
Harvest a charging Polar Bear from under 10m (approx. 33 ft) at 100% harvest value using any recurve bow.
Harvest a fleeing Red Kangaroo using any muzzleloader.
Kill 2 Red Foxes or 2 Arctic Foxes with a single shot.
Harvest a male Lynx at 100% harvest value using the longbow or the cable-backed bow from over 20m (approx. 66 ft) without using a platform (lungs and/or heart must be hit).

It appears the missions are no longer listed but still active in the background. I just completed one objective.

Just completed the Blacktail heart shot at 7.5m for the hard antlers mission, thanks for the heads up Hoo.
