At the Afghan-Tajik border, you can hunt Marco Polo sheep as well as Pamir Ibex in the mountains. Wild boar released by Russian Nobles for hunting. Brown Bear, snow sheep as well as Tur sheep which have pretty peculiar horns.

A harsh rocky only terrain with animals who are very alert might be interesting. But it would need a mechanic for the altitude I think. Macro Polo base camps are between 10–12,000’ feet (3000-4000m) and the hunting takes place from camp elevation up to 13,500’ (4500m).

Putting endangered species in a reserve would me annoy me greatly.

both the markor and the snow leapord are highly endangered with the markor having only 400 or less left in the wild.
