The game does not support eyefinity (3 monitors // 5760 x 1080 resolution etc).

It'll run. It won't work properly. Game doesn't span properly and consequently the aspect ratio is off. Has to do with the layering of tracks versus layering of droppings/scat. Tracks appear to be rendered just below the surface. Whereas, droppings/scat are either right on top or protrude slightly above the ground layer and can be noted in the HM. Like the man says, full functionality is not available for us triple monitor users.

No biggie. Makes it much more challenging and brings an element of chance/luck to the hunt.
