And this is probably quite realistic. I would argue that everything that will hit a brain (actualy a specific part of it, but lets generilze this), spinal cord above the shoulder line, heart or a liver will be most probably deadly - regardless would it be by 45-70, or .22LR (assuming it would have enough of penetration). Well, maybe to a point - if big animal has relatively big organs, very small projectile might be not enough. But in general those will be almost always deadly wounds. With lungs this is a little bit more complex.
Here you need to colapse lungs - stopping oxygen delivery to the brain, or/and drop blood pressure by intensive bleeding. Both takes usualy a bit of time.
However still, IRL, only brain and spinal cord shots realy guaranty instant incapitation of animal. I know that you, real hunters, experience (almost)instant incapitations also with lungs, or heart shots, but this has as much to do with the shot placement, as with psychological reaction of the animal to being shot. And usualy even with a heart shot there is a need to pass some time before blood pressure will drop to the point in with animal will loose its concious. And, again - bigger the wound, shorter time is needed. But let's say, that all those instances provide a relatively quick death. Problem shows up when we miss the vitals. Here we can count on blood lost only. And if wound is not severe enough, animal's organism can actualy stop the bleeding and heal the wound.
In the game this is simplified of course.
But my point is that bigger caliber gives bigger margin of safety when we actualy miss the vitals. And even the best shooters do screw up something from time to time.
And while in game this is simplified it is still present.
And I realy like this - this is only game I know with simulate terminal ballistics more-less realisticaly.

I actualy like the look of the 8x57
You know, for me this is a little bit like with a car. You will spend most of the time inside, but you still care how it looks like outside.
But I agree that most important is that, what is under the hood.
And to sum up. I know that from here - I mean .300 vs. 7mm, this is mostly matter of taste (at least up to 100 m). And that's why I have to figure this out by myself from now.
But thanks again for your efforts.
Of course if you want to add something, go ahead.
