Is There any way to change the direction or pose of a trophy?

Found out how to change poses.

1. walk up to the animal right click mouse
2. left click mouse to change pose

The poses aren't working for us. We've tried starting new hunts multiple times. :(

Yes. We also can't view the animals info.

Are you absolutely sure you are in single player? You often use the term "we" in your posts. Just want to clarify that you're not in the lodge with another player. This would only apply to changing poses of course, not viewing the animal info.

If the symptoms you've described are true, then this is a new bug. Can you please confirm the process you take to view the info and change the poses? Maybe even make a video?

The reason I say we in my posts is that me (14) and my brother (13) use the same account. :)
And yes it is in single player.

Alright, thanks for clarifying. I'm not sure what would be causing that. Are you able to confirm exactly how you are trying to access the animal info, and how you are trying to adjust the animal poses?
