It is a very subjective question and without knowing more about what you already have suggestions could be pointless. In general I would initially go for versatility or if there is a specific species you enjoy hunting look for a setup which relates to that e.g. tree stands in optimum locations for red deer etc. something along those lines.

Buy the K98k Bolt-Action Rifle, it's a very good rifle. It have the best ironsights in the whole game and you can skip buying the scope if you want to.
If you want camo buy Doc, trapper or outback outfit bundles for 684-816em.
Buy the backpack if you have problem carrying stuff.
Buy a bow or crossbow for stealth hunting.
Buy O/U or SBS shotgun and you are good to go.

Play on other peoples maps and use their treestands, tents and bait sites and such. You can get your own later.

Gotta say that the sights on the Mosin are probably even better than the K98k's.
