I think it can be done from the hunt history, don't know how exactly. And the limitation is probably due to the additional information that needs to be stored for the 3d model that can be deleted after 24 hours if you decide not to taxidermize the animal.

Correct, we do not have a possibility to save this data forever, and we are talking about huge amounts for every single animal every single player harvests.
