In a nutshell, bows seem to be bugged in that they get advantages in permanent towers when they should not
At the same time rifles and pistols etc are now show no wobble at all and this seems unrealistic
Has there been an overcompensation after the previous patch that restored stability to deployable towers?

Since a hunting tower will have a rail you can use like a sandbag on a bench, near-zero wobble is perfectly realistic. Ditto for a tree stand, if it has a rail. This advantage will also extend to crossbows. Virtually any sort of rest will be much stabler than offhand.
Of course, it should not extend to hand bows, but I'm not sure if the game's code allows for that distinction.
