putting antelope horns on an elk/deer, then slightly change the stature of the animal isn't that hard...... they changed the body on a sitka from a whitetail, and they also changed the color from the whitetail, and also gave it different horns. I am very sure they didn’t make the Sitka out of the Whitetail. The sitka is called «Sitka-blacktailed deer» out of what i’ve read, and in the game they look a lot more like the blacktail, not the Whitetail

No, in all honesty, the Whitetail and Mule Deer were the first deer species in the game. The Blacktail came later on, when LP was created. The Blacktail is modeled after the Mule Deer, which is actually very obvious in early pictures of both. By the time the Blacktail was created, the Mule Deer had already undergone a few changes, since in the beginning they looked like gray whitetails. And IRL, Mule Deer and Blacktail are related as well, some even thought that Blacktail were actually a sub species of Mule Deer and vice versa.

I have to say I prefer it when the game sticks very much to ethical hunting. IMHO polar bears shouldn't really be on the table, and all the "maximum that you can harvest" (be it weight or numbers) competitions should be scrapped. Really want to hunt endangered or controversial species ethically? Make an African reserve that's stated in-game to be a private area with problem animals or some such, charge additional real money for the license, and pay out a portion of the profits directly to an African wildlife preservation charity. Hell, it'd be nice to see something like this every now and then anyway.
Long story short, I'd rather the game stick to ethical hunting, personally, unpopular opinion or no.

Well, but they are both still deer, they behave like deer, move like deer, react like deer and so on. Each class of animal in the game doesn't only have it's own looks, they differ in the points mentioned before and even some more. And introducing a new class into the game is way more work than doing a reskin from white-/blacktail to sitka or let's say rusa deer. Sitka Blacktail and Columbia Blacktail ARE subspecies of Mule deer.
